Ingredients

- 4 Rositas Tortillas
- 2 chicken breast fillets
- 1 tablespoon oil

2 tomatoes, sliced into wedges
- 8 spring onions, trimmed
- 1 red capsicum, slice into strips
- 2 tablespoons seasoning mix (salt, pepper, cumin)
- 125g salsa

 

Recipe Instructions:

1. Coat the chicken breasts with the seasoning mix and place under a hot grill or on a BBQ grill plate for 3-4 minutes each side. Remove, cut into strips and keep warm.

2. Heat the tortillas on a low setting in the microwave for 35-40 seconds.

3. Place chicken strips in the centre of each Tortilla, top with tomato wedges, spring onions, capsicum strips and salsa. Fold in the bottom of the Tortillas, then the two sides. Serve and enjoy.
