- 2 Rositas Tortillas
- 1 Sweet Potatoe, peeled, sliced 5mm thick
- 1/2 Red Pepper, deseeded and cubed
- 2 tablespoons balsamic vinegar
- 1/2 Yellow Pepper, deseeded and cubed
- 4 tablespoons olive oil
- 1/2 Orange Pepper, deseeded and cubed
- 1 Jar sun-dried tomato pesto
- 1 onion, sliced
- 1 bag rocket leaves
- 1 clove garlic, crushed
- 1 block of feta cheese
- Salt and pepper
1. Place the peppers and the onions on a baking tray and sprinkle with the crushed garlic, salt and pepper and 2 tbsp of olive oil.
2. On another baking tray, layer the sweet potatoe and sprinkle with the balsamic and olive oil. Place both in the oven at 200 degrees celsius for 20 minutes or until potatoe is soft.
3. Heat the Tortillas on a low setting in the microwave for 20 seconds. Spread them with a thin layer of tomato pesto, place the rocket in the middle, top with some peppers, onions and sweet potato, then sprinkle with feta. Fold in the bottom of the Tortillas, then the two sides. Serve and enjoy.
